I’ve changed my mind about sprouts
For years, I thought of sprouts as a condiment or a garnish, you know, something small to sprinkle on top of a salad or sandwich . But the more I read and do research on the benefits of sprouts the more convinced I get that they deserve a bigger space on your plate.
Because sprouts are one of the most accessible, nutrient-dense, and affordable fresh foods you can add to your diet. And if you are thinking the way I used to, you are completely underusing them.
What are sprouts?
Sprouts are seeds that have just begun to germinate and grow into young plants. They are harvested very early—usually within 2–6 days—before they develop into mature vegetables.
